Spade, digging fork, Sauzahn: which tool suits which soil

The spade cuts, the digging fork breaks, the Sauzahn loosens without turning. Which digging tool suits sand, loam and stony ground, why digging over fell out of fashion, and when it still has to happen.

There is that moment in spring when the spade simply stops. You have set it, put your whole weight on the tread, and the blade is stuck ten centimetres deep in clay loam. You wobble, the handle bends, your foot slips off.

The soil is not to blame. Most of the time it was the wrong tool. A spade wants to cut, and wet loam cannot be cut, it sticks. A digging fork would have broken open the same spot in a fraction of the time.

One thing at a time: what the spade is genuinely good at, why the digging fork is the more honest tool on heavy ground, what a Sauzahn and a cultivator get done without turning the topsoil over, and why good old digging has picked up such a bad reputation.

At a glance

  • The spade cuts, the digging fork breaks. A straight edge is what you want for planting holes, lawn edges and dividing perennials. On loam, clay or stony ground the fork is faster.
  • Narrow blade for heavy soil. The effort grows with the surface area of the blade. A border spade with a 14 to 16 cm blade is not a compromise on loam, it is the right tool.
  • A Sauzahn and a cultivator loosen without turning. They draw a fissure through the topsoil and leave the layers where they belong. For the yearly bed preparation that is enough.
  • Digging over is the exception. A new bed cut from lawn, real compaction, couch grass rhizomes and heavy clay before winter justify the spade. An established vegetable bed does not.
  • Handle length decides how your back feels. Rule of thumb: stood upright beside you, the spade ends between hip bone and elbow.

The spade: the tool for a straight edge

A spade has a straight, sharpened edge and a flat blade. It is a knife with a footrest. Anything that needs a clean dividing line is spade work: the planting hole for a fruit tree, the edge between lawn and border, slicing off a perennial that has outgrown its spot.

The standard blade on sale is roughly 18 to 20 cm wide and 28 to 30 cm tall. One spade depth therefore matches the topsoil almost exactly, meaning the upper, darker layer that the roots run through.

On light sandy ground the wide blade is a gain, you move more soil per cut. On loam the maths reverses: the force you need grows with the surface area, and the loam sucks itself onto the steel. The drainage spade with its long, tapered blade is the extreme form of the narrow build, ideal for planting pits.

Sharpen first, then apply force

Most spades in the shed are blunt. A few strokes with a coarse file along the front edge lower the effort noticeably. Work at the angle that is already there, on digging tools usually around 30 to 45 degrees, and on stony ground go blunter rather than keener. Dividing perennials is where the spade shows its best side. You cut all the way round, lift the clump out and split it with one decisive cut. Timid sawing does more damage than a clean cut. With tough, thick-rooted plants such as daylily, autumn aster or rhubarb that is the difference between a plant that comes back and a shredded remnant. Peonies are the exception: lift those out whole in September, wash the root off and divide it with a knife into pieces carrying three to five buds. The digging fork: lifting instead of cutting

Four flat tines instead of one closed surface. The fork goes in against a fraction of the resistance, because it does not sever the soil, it lets the soil pass between the tines. Then you lever on the handle, and the clod breaks open along the cracks it already had.

So the soil falls apart where it was weak anyway. You get crumbs instead of lumps, and the earthworm lying across your path is more likely to be pushed aside than cut through.

On loamy and stony ground the fork beats the spade almost every time. Stones that a spade blade catches on and buckles against simply slip between the tines.

For harvesting it is the obvious choice anyway. Potatoes, Jerusalem artichokes and horseradish come out of the bed with the fork, because it does not slice through the tubers. Set it 25 to 30 cm to the side of the row, so outside the ridge, and lift the whole portion of soil rather than stabbing into the crown. How to set the row up is in planting potatoes.

The fork's second speciality is couch grass (Elymus repens). Its runners are brittle, and every fragment with a node sends up new growth. Chop couch grass with a spade or run a rotavator through it and you will have propagated it reliably. With the fork you lift the whole mat in one piece and pull the strands out by hand.

Wet soil is off limits

Neither spade nor fork belongs in soil that smears when you squeeze it. You destroy exactly the crumb structure you are trying to build. The test: take a handful of soil and press it. If the broken face has a greasy shine, if soil sticks to the spade blade instead of falling off, or if your boot leaves a smooth polished print, the ground is too wet. On sand and loam two or three dry days are often enough, on clay it can take one to two weeks.

Sauzahn and cultivator: loosening without swapping the layers

The Sauzahn is a single, sturdily curved tine on a long handle, a name you will hear across Austria and southern Germany. Elsewhere the same tool goes by soil loosener, ripper or simply single-tine cultivator. Not to be confused with the Krail or Karst, which are multi-tined drag hoes. You push it in at the edge of the bed and pull it towards you. A fissure 15 to 25 cm deep runs through the topsoil as you go, the soil lifts, cracks open and drops back. The cultivator is the shallower version: three to five curved tines that comb through the top 5 to 15 cm. It comes out for bed preparation in spring and any time the surface has crusted over after heavy rain, or a harvested row needs sowing again.

  1. Clear the bed

    Mulch residues, dead plant material and coarse roots go to one side. The rest goes on the compost heap.

  2. Draw runs with the Sauzahn

    Push in at the edge of the bed, pull towards you with both hands, lift out at the end of the run. On heavy soil space the runs 20 to 25 cm apart.

  3. A second pass across the first

    The second round at right angles turns single fissures into a network. The topsoil is aerated without having been turned.

  4. Comb in compost and cover

    Spread two to three litres of mature compost per square metre, comb it into the top few centimetres with the cultivator, then 5 to 7 cm of mulch on top while the bed rests. That protects the loosened surface from capping over. Before sowing, rake the covering aside one or two weeks in advance, otherwise the soil stays too cold and fine seed never makes it through. Fresh woodchip locks up nitrogen, so on beds prefer wilted grass clippings, leaves or straw.

The mattock: when roots are in the way

The mattock, in German the Wiedehopfhacke, has two working faces on one head. The broad blade draws soil towards you and slices turf off, the narrow one drives in as a wedge between stones and chops through roots. The heavy head works by swing, not by muscle.

For an old shrub stump or a root-bound bank it is the right tool. A spade would be bent out of shape by the third root it met.

Keep that wedge sharp and you will need half the number of blows. And swing the mattock from your knees, over a short travel.

Why digging over fell out of fashion

Digging over means slicing off a clod, lifting it and rotating it through 180 degrees. That turning is the problem.

Soil is not a homogeneous heap of earth, it is a structure that grew into place: crumbs, continuous pores, root channels, and a litter layer on top that keeps the supply coming. Turning smashes that structure. The crumbs fall apart, the continuous pores are cut off, water no longer finds its way down. And the sudden surge of oxygen has the soil organisms respiring humus away faster than it is being rebuilt.

Then there is the plumbing. The common earthworm (Lumbricus terrestris) digs vertical burrows one to two metres deep, in exceptional cases down to about three metres. They are drainpipe and ventilation shaft in one: heavy rain soaks away through them, and roots follow them down. One cut of the spade severs that system, and the fungal network that supplies many roots with water and phosphorus is torn along with it.

And then the most mundane side effect of all: every dig brings sleeping weed seed up to the light. Chickweed, fat hen and gallant soldier stay viable in the soil for decades and germinate as soon as they get warmth and moisture along with the light. Dig every spring and you have ordered yourself a fresh flush of weeds.

Loosen, do not turn. The soil should get air, not be stood on its head.

When digging over does make sense after all

The exceptions are concrete enough that you can spot them out at the bed.

Four cases for the spade

  • A new bed cut from lawn

    If lawn is to become a vegetable bed, the turf has to go. The best time is autumn, early September to late October · CW 36 to 44.

  • Genuine compaction

    Puddles that stand for hours after rain, and roots that kink sideways at 20 cm depth, are the signs. A spade pit shows it: lift out one spade depth, look at the wall, break open any smooth grey zone.

  • Couch grass and ground elder

    You only get perennial weeds out if you work the whole area through once. With ground elder the same applies, only more unforgivingly: one single forgotten piece of rhizome and next year the corner is full again. Every piece goes into the council green waste, not onto your own compost heap. Industrial composting gets hot enough, your garden bin usually does not.

  • Heavy clay before winter

    On clay-rich and heavy loamy soil, letting the frost do the work pays off. Once the bed is cleared and the soil has dried out, usually late October to late November · CW 44 to 48, dig it over roughly and leave the clods unsmoothed. Only while the soil crumbles, never while it smears. Freezing pore water bursts the lumps apart and in March the surface falls to pieces under the rake. If the winter stays frost free, the effect stays away too, and you work the surface shallow again in spring. And cover the ground with leaves or straw, otherwise winter rain leaches the nitrate out.

For an asparagus bed it goes without saying: asparagus stands in the same place for ten to fifteen years, and whatever you failed to loosen deeply beforehand you will never make up for. The same is true of rhubarb.

Not the same depth every year

Always working to exactly one spade depth creates in miniature what the plough creates on a field: a smooth, compacted pan just below the worked layer. Alternate between loosening deeper and working shallow.

Which soil calls for which tool

The most honest test costs nothing, and it works with moist soil rather than wet: take a handful and roll it between your palms. If it falls apart straight away, you have sand. If it forms a sausage that cracks when you bend it, it is loam. If you can roll it out into a thin thread and bend it like modelling clay without it tearing, it is clay.

On sand the wide spade is quick and the digging fork almost redundant. The real subject there is humus, so the soil holds water, and green manure over the winter half-year replaces a good share of the mechanical work. On loam the fork belongs in the basic kit and the spade has a narrow blade. On clay you are often left with the frost treatment or a raised bed. On stony ground every spade edge picks up a nick, so use the fork and collect the stones as you go.

Handle, grip and length

Most of what turns gardening into back work comes down to the handle. A tool that is too short forces you into a rounded back, and then your lumbar spine carries the load instead of your legs.

Rule of thumb for a spade with a grip: stand it upright beside you, and the end of the grip should sit between hip bone and elbow. At 1.70 m body height that means around 100 to 110 cm overall length, at 1.90 m more like 115 to 125 cm. Both exist on sale, from the short T-grip at about 100 cm to the long handle over 120 cm. So measure before you buy rather than guessing: stand the spade next to you and hold the grip end against your hip bone. Anyone whose grip sits a hand's width too low year after year is working with a rounded back. Cultivators, the Sauzahn and hoes follow a different rule, because you pull with them instead of pushing in: there the handle may reach shoulder or chin height.

Material and grip shape

  • Ash

    The classic for long handles. Springy, it flexes as you lever, rarely breaks without warning, and it can be sanded and oiled. In cold weather wood sits more comfortably in the hand than metal.

  • Beech

    Slightly heavier than ash, but no harder and considerably less elastic. Beech moves more as moisture changes and breaks more brittlely, which makes it second choice outdoors. Worth having at most for short grips used dry. For spade, fork and hoe, ash stays the right answer, or hickory in North America.

  • Fibreglass

    Tough, weatherproof, maintenance free. The price: vibration arrives harder at your wrist, and a cracked fibreglass handle cannot be repaired and is barely recyclable, it ends up in general waste.

  • T-grip and D-grip

    The T-grip is slim and lets the hand rotate freely, and it is the traditional shape in central Europe. The D-grip encloses the hand and gives more control when levering, especially with gloves on. If you lever a lot, take D; if you push in and twist a lot, take T.

Look at the tread: a rolled-over edge along the top of the blade decides whether the arch of your foot hurts after an hour. And do not let the weight put you off, because with a forged blade the mass pushes in for you.

Scrape the soil off after every use, and once a year check the edge, the handle seating and the rivets, at the latest when you put tools away for winter. If you are only starting out, basic tool kit for beginners sorts the essentials.

Common questions

Do I need both a spade and a digging fork, or will one do?

On sandy or light, humus-rich soil one good spade is enough. On heavy loam, stony ground or with root vegetables the digging fork is the main tool. Buy whichever suits your soil first.

When do you have to dig a vegetable bed over?

In most home gardens, never. A bed that is mulched and fed with compost needs no more than loosening with a Sauzahn or digging fork before sowing. Digging over is for special cases: a new bed cut from lawn, genuine compaction, couch grass, or heavy clay ahead of the winter frost.

What is a Sauzahn and what is it good for?

A single, strongly curved tine on a long handle, also sold as a soil loosener or single-tine cultivator. You pull it through the topsoil and open a fissure 15 to 25 cm deep without turning the soil over. That is how you loosen a bed before sowing and break up a crusted surface.

Which spade length suits my height?

How do I get rid of couch grass in a bed?

Do not hoe it and never rotavate it, because every piece of rhizome with a node sends up new growth. Take the digging fork, lift the area a portion at a time and pull the white runners out in one piece. Then remove every new shoot for weeks afterwards, so the remaining roots use up their reserves.
